Taylor, a lawyer and lifelong cookie lover, started baking as a way to de-stress. Frustrated by the lack of natural, allergen-friendly, and delicious cookie options on the market, she began developing her own recipes. After experimenting with over 400 batches, she discovered dates were the key to naturally sweetening cookies without added sugar. Taylor now juggles her law career along with running Unicorn Bites from Montclair, NJ, where she lives with her husband and her adorable Westie, Rigatoni, who snuck some early samples along the way, and also inspired the brand's beloved mascot!
